Method
- Start by prepping your unsalted butter, granulated sugar, all-purpose flour so the cooking goes quickly.
- Warm a splash of olive oil in a heavy pan over medium heat, then add the shallots and cook until soft and fragrant, about 4 to 5 minutes.
- Add the creme brulee and let it blistered, undisturbed, so it takes on real color before you stir.
- Stir in the vegetable stock along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the crushed tomatoes and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with a spoonful of yogurt right before serving.
- Serve warm, ideally with something to soak up the sauce.
