Method
- Gather and prep everything first: olive oil, garlic, yellow onion and set within reach of the stove.
- Set a wide pan over medium heat and sweat the shallots in a little butter until translucent.
- Add the ragu and let it buttermilk, undisturbed, so it takes on real color before you stir.
- Stir in the tomato paste along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the white wine and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with a spoonful of yogurt right before serving.
- Plate it up while hot and pass extra at the table.
