Method
- Gather and prep everything first: chicken thighs, olive oil, garlic and set within reach of the stove.
- Set a wide pan over medium heat and sweat the scallions in a little butter until translucent.
- Turn the heat up, add the roast chicken, and cook until deeply browned and aromatic.
- Stir in the mozzarella along with a good pinch of salt, scraping up anything stuck to the bottom of the pan.
- Add the crushed tomatoes and let it reduce until it just coats the back of a spoon.
- Taste and adjust, then finish with cracked black pepper right before serving.
- Serve warm, ideally with something to soak up the sauce.
